Wood Fired Hot Cross Buns


Time to dust your wood-fired oven off for the first time of the year with this ace Easter wood-fired hot cross bun recipe. Its really quick & easy, & made so much more fun by cooking outside with firewood.  

Create a rolling boil to 300ml milk, remove from the hob and add 50g butter & leave to cool. Add 500g strong bread flour, 75g caster sugar and 7g sachet yeast into a bowl. 

Make a well in the centre. Pour in the warm milk and butter mixture, then add 1 whisked egg & mix together until you have a sticky dough.

Flour your kitchen surface and knead your dough for 5- 10 minutes until soft and elastic, then place the dough into a lightly oiled bowl. Cover with cling film and leave to rise in a warmish place for 1 hr or until doubled.

Pour in 75g sultanas, 50g mixed peel, zest of 1 orange, 1 tsp ground cinnamon & ensure that ingredients are well distributed & leave to rise.

Divide into even pieces (roughly 75g in weight) & roll each piece into a smooth ball on a lightly floured work surface. Arrange the buns on one or two baking trays lined with parchment (ensure that parchment doesn't overhang the baking tray), & allow enough space for the dough to expand.

Have wood-fired oven around 200C. For the cross mix 75g plain flour with about 5 tbsp water to make the paste for the cross – add the water 1 tbsp at a time to create a thick consistency.  Place into a piping bag & pipe crosses into the buns.

Put in oven for 20 mins & wait until golden brown.

Heat 3 tbsp apricot jam to melt & brush over the top of the warm buns and leave to cool.

7g instant yeast
1 egg
1 finely diced apple
75g sultanas
50g mixed peel
1 tsp ground cinnamon

Cross & glaze

75g plain flour, plus extra for dusting
For the glaze
3 tbsp apricot jam
